Two New Recipes


These are two supposedly quick and healthy recipes I found in a Good Housekeeping Magazine at the doctors office today. I have not tried them yet, but I think they look very good and I would love to try them soon. Thought you might, too!

Homemade Café Rio

This is the reason I even started this blog. I got married and actually started cooking and fell in love with this meal...Rick did, too. It is SUPER good! It makes a lot. Normally if I cook it on a Sunday we will still be eating it on Wednesday Night. So it makes a lot! The nice thing is that you can serve it a lot of ways. We have tried it Burrito Style, where you make everything and fold it up in a Tortilla, or we have done it in a bowl, with the Tortilla on bottom and everything else on top...or I have even torn apart the Tortillas and mushed it all together...that is the way I like it! I have served it to a family with 4 kids under the age of 7 and the kids all loved it too! So it is definitely a great meal. There are a few parts to it, so I have included 3 Recipes. I have yet to make the Lime Rice...but I bet it's good too. We just eat it with white rice...it's easier and less to buy and make! I hope you all enjoy it as much as we have!


I normally make the pulled pork and the dressing and serve them together with
Tortillas, White Rice, Grated Cheese and Chopped up Lettuce. ALSO, I have never used the Tabasco or Buttermilk in the Dressing (It was two less things two buy and saved money). So you can make it without those two items if you want to save money or don't like them.
Also, you can use Tomatoes instead of Tomatillos. And if you can't find the Hidden Valley Buttermilk Ranch Mix, you can use just a normal Hidden Valley Ranch Mix. (Sometimes our store doesn't have the Buttermilk kind in.) It is just a bit sweeter with the Buttermilk kind. but very good with the normal kind, too.



Little Pink Chicken


Deseret Book just came out with a new Worlwide Ward Recipe Book. I do not have this book, but I got a sample recipe from it online. I have not tried it yet, but it looked good to me! So I figured I would share it.
